Ingredients:
15-20 baby red potatoes, skin on
15-20 fresh leaves of fresh herbs
3-4 cloves of fresh garlic, sliced thin
¼ cup extra virgin olive oil
1 teaspoon salt
1 teaspoon pepper
½ teaspoon garlic powder
Directions:
In a small bowl, combine salt, pepper and garlic powder. Clean potatoes. Make a slice about three quarters of the way through the potato.
Spread open slightly, sprinkle salt and pepper mixture inside and then slide herbs of your choice into the incision. You can use any herbs like sage, fresh bay leaves, parsley, rosemary or basil. You can also combine herbs for more complex flavors. Place potatoes on a baking sheet coated well with olive oil.
With a pasty brush, brush remaining olive oil over top of potato and inside incision. Sprinkle salt and pepper mixture over potatoes.
Bake at 350 degrees for about one hour or until tender. Smash each potato down with a masher. Garnish with chopped fresh herbs and a drizzle of olive oil.
I generally serve two per plate.
