Thanksgiving Cranberry Pecan Pie with Cornmeal Crust

(Great as a side to your Thanksgiving Bird!)

Ingredients

For the Cornmeal Pastry:
1 cup flour
½ cup yellow cornmeal
¼ cup sugar
1 teaspoon salt
4 tablespoons chilled butter, cut into pieces
3 tablespoons shortening
4-5 tablespoons ice water

For the Filling and Glaze
2 cups fresh cranberries
1 (16oz) can whole cranberries
2 Granny Smith or other tart green apple ( unpeeled and chopped fine)
1 cup dried apricots, chopped
1 cup chopped pecans
1/3 cup maple syrup
¼ cup flour
1 egg yolk with 1 tablespoon milk or cream
1/3 cup orange marmalade

Directions:
Make pastry. In a large bowl, combine flour, cornmeal, sugar and salt. Add butter and shortening. With a knife or pastry blender, mix until ingredients resemble course crumbs.
Sprinkle 2 tablespoons of ice water over mixture and toss with a fork. Mixture should be barely moist, enough so it will hold together when formed into a ball.
Add more water if necessary, a little at a time. Form dough into a flat disk, wrap in plastic wrap and refrigerate for a least 30 minutes. When dough is chilled, on a lightly floured surface, roll out dough into a 12-inch circle. Fit dough into a 9-inch pie plate. Trim edges. (Crimp to create decorative border if desired.) Prick the pastry with a fork. Place pie shell in freezer to chill for at least 15 minutes before baking. Preheat oven to 375 degrees.
Make filling. In a food processor, add fresh cranberries, pecans, apricots and apples. Pulse on and off to chop coarsely. Transfer ingredients to large bowl.
Add canned cranberries, maple syrup and flour. Mix well and set aside.
Remove piecrust from freezer and lightly baste with egg and milk wash.
Bake for about 10-15 minutes until lightly golden in color. Fill pie shell with cranberry mixture. Return to oven and bake for another 20 minutes until crust is rich, golden brown.
In a small sauce pan (or microwave) warm marmalade over love heat until pourable. Spoon marmalade over pie. Serve warm or cold as a side to your Thanksgiving turkey.
