Strawberry Margarita Mascarpone Dessert Egg Rolls
Ingredients
½ oz Tequila
½ oz Grand Marnier of Triple Sec
½ oz Margarita Mix (to taste)
8 oz Mascarpone Cheese
4 oz Cream Cheese
1 tsp Lime Zest (3 limes)
1 Package of egg roll wraps
1 Package of fresh strawberries
1 Egg (beaten and add a little water to make eggwash)
Method of Preparation
First zest the limes using a zester tool. If you don't have one you can use a knife just remember to not dig into the rind to much, just shave the outside layer off and cut up as small as you can.
Next place all the ingredients in a bowl and whip or blend together all ingredients except strawberries and wraps.
Then slice the strawberries into small wedges.
Layout one egg roll wrap and place it with a corner facing you and one away from you like a diamond shape.
Place 3 or 4 strawberry wedges in center with a spoonful of margarita mix.
Fold bottom of eggroll over the mix coming up 2 inches short of the top.
Then fold each side in straight over to the center. Start rolling away from you and when you come close to the end use the egg wash to seal all the edges. Continue rolling until it is finished. Set aside and continue process until all ingredients are used. You may bake them at 350degrees but I suggest to fry them in ½ inch of vegetable oil. Cook until golden and sprinkle with cinnamon and sugar if you like as soon as them come out.
