Items needed:
- Ribs
- Large braising pan
- Perforated pan
- Aluminum foil
- Hickory chips
- Plastic wrap
- Water
- Large sheet tray / Large hotel pan
Procedure:
- Apply rub to ribs
- Sear ribs on grill (optional)
- Place wood chips and water in bottom of braising pan, then place other perforated pan above, with ribs resting in the perforated pan.
- Apply heat to pan until water evaporates and smoke begins to appear. (apply small amounts of water to control smoke)
- Cool ribs.
- Wrap ribs in plastic wrap and place on clean cookie or braising pan.
- Slow cook ribs on 250-300 F for approx 3 hours.
