Radio Milano Caprese Salad

3 Campari tomatoes
2 tablespoons extra-virgin olive oil
Salt and freshly cracked black pepper, to taste
3 ounces burrata cheese (a fresh, creamy Italian cheese available at AJ's and specialty markets. Substitute fresh mozzarella if desired)
1 tablespoon balsamic vinegar
6 fresh basil leaves, torn into strips
1 teaspoon chopped fresh parsley

Heat grill to medium. Brush tomatoes with olive oil and season lightly with salt and pepper. Grill the tomatoes about 1 minute, then turn and grill on the opposite side. The tomatoes are ready when the skin begins to crack. Place the cheese in the center of a plate and arrange the tomatoes around it. Drizzle with olive oil and balsamic vinegar. Garnish with basil, parsley and more pepper.
