1 pound pork tenderloin
1 tablespoon cumin
8 ounces jarred or fresh mango spears
1 cup pico de gallo (fresh salsa)
Preheat grill to medium-high. Rub cumin all over pork. Grill pork 10 to 15 minutes, turning once or twice. Meanwhile, drain and finely dice mango spears and mix with pico de gallo. Remove pork from grill (leave grill on). Slice pork and check for doneness. If needed, place slices back on grill for 20 to 30 seconds. Serve pork topped with salsa.
