Pasta With Garden Vegetables

12 ounces dried pasta, any type
2 medium zucchini or summer squash, or one of each
1 medium onion, peeled
1 large tomato
2 teaspoons garlic-flavor or plain olive oil
2 tablespoons chopped fresh oregano

Prepare pasta according to package directions; set aside. Meanwhile, finely chop zucchini, onion and tomato. Heat oil in a large skillet over medium-high heat. Add zucchini and onion and toss until tender, about 2 minutes. Add tomatoes and stir until warmed through, about 1 minute. Toss with cooked pasta and sprinkle with oregano.

Prep time: 12 minutes. Total time: 12 minutes. Serves: 4.
