1 cup vegetable broth
1/4 cup finely chopped zucchini
1 teaspoon olive oil
3/4 cup uncooked couscous
1/2 cup mandarin-orange sections (drained)
Combine broth, zucchini and oil in a small pot over medium-high heat. Bring to a boil. Turn off heat and stir in couscous and oranges. Cover and let rest 5 minutes. Fluff with a fork.
To make a castle, pack a ramekin with couscous, cover with a serving plate and then flip it upside down and unmold couscous onto plate.
To create a second tier, repeat the process with a shot glass or other small vessel and stack it on top.
