Spicy Orange Pork Kebabs

Mixed with a little jelly or marmalade for sweetness and vinegar for tang, spice rubs make a perfect glaze for grilled meats and seafood. Check out the many varieties of spice rubs, jams and vinegars available at supermarkets and specialty stores, buy what sounds yummy to you and see where your imagination takes you.

Spicy Orange Pork Kebabs

12 ounces pork tenderloin
2 tablespoons spice rub for grilling, or chili powder (divided use)
1 tablespoon cider (or other) vinegar
1/4 cup orange marmalade

Cut pork into 1- to 2-inch chunks. Place in a resealable plastic bag, and add 1 tablespoon seasoning; shake to coat. Let sit at room temperature while you heat the grill to medium-high. Meanwhile, combine vinegar, marmalade and remaining spice rub in a small bowl. Thread pork onto 4 skewers. Grill kebabs 5 minutes, turning every 1 to 2 minutes. Brush kebabs with marmalade mixture, and grill another minute.

Makes 4 servings.
